The first thing we should do is peel the carrots and then grate them or cut them into small squares, depending on taste.

Personally, for this type of tasks I prefer to cut it into squares, yes, it takes a little more work than putting them directly on the grater but I feel that it turns out better.

Once we have chopped our carrots, we place them in a large container.

Think that it should be large enough to store the carrot, brown sugar and water.

As soon as we have the carrot inside, we add all the brown sugar and TWO liters of water.

Now we will let this mixture rest for about two days or so.

It is important that it is at room temperature and out of the sun, so you can put it in the pantry, inside a piece of furniture, etc.

After two days we add the remaining liter of water and store it again for 12 hours.

Ready, after that time it is ready to consume.

You may think that it will be super sweet because of the initial brown sugar, but that is not the case at all, since the fermentation process during all that time

has eaten, so you might even want to sweeten it with a little honey.
